Jon is a hospitality, culture, and operations expert. He first started in the hospitality industry as a teenager. He diverged from the industry, briefly, once considering a career in law, but realized that his true passion came in the service of others. Beginning in the front-of-house, he’s worked virtually every job, along the way building a skillset and operational background that has helped him throughout his career. A servant-leader, he is happiest building great teams of passionate, committed professionals, and serving our guests.
Jon was the opening Restaurant Manager for TRADE, in 2011, leaving in 2015 to begin his partnership with Eric Papachristos and Chef Jody Adams at their Greek fast-casual restaurant, Saloniki Greek. The partnership has since opened 3 Saloniki Greek’s with more on the way. As part of a post-pandemic operational re-alignment, Jon returned as COO for the entire restaurant group, bringing with him his expertise in both, full-service, fast-causal, and experience as an entrepreneur, and founder.
